Im with Carlene who is Aunt May from Hellshire Beach daughter. We recently did a video at Aunt May’s with Keisha who told me about her sister and the awesome stuff she was doing in Florida. 547 miles later and we’re in Carlenes Kitchen for Aunt May’s Fish Fry.
Cooking from the back of her house Carlene cooks an average of 150 fish 2 cases of chicken leg and thigh and goes through about two 16 qt. tubs of escovitch sauce. She’s using Authentic Jamaican flavors she learned from her mother who handed down her skillful art of cooking to her daughters. They both have their individuals styles but they truly represent their mother’s legacy really well.
